One Pot Pad Thai

Ingredients:
-1 package of rice noodles⁣
-1 3/4 cups carrots⁣
-2/3 cup chopped onion⁣
-2 cloves garlic⁣
-1 cup bean sprouts⁣
-2 eggs⁣
⁣Sauce:⁣
-1 tbsp peanut butter⁣
-2 tbsp honey⁣
-2 tbsp lime juice ⁣
-1 1/2 tbsp rice wine vinegar ⁣
-3 tbsp fish sauce⁣
-1/4 cup coconut aminos or soy sauce⁣
-1 tbsp sriracha ⁣
⁣Garnishes:⁣
-1/4 cup green onions⁣
-1/3 cup crushed peanuts ⁣
-lime⁣ slice
-cilantro⁣

Instructions:⁣

-prep your veggies, wash and slice
-mix all ingredients for the sauce in a bowl and set aside
-cook rice noodles according to package instructions and set aside ⁣
-in the same pot add a dash of sesame oil, carrots, bean sprouts, garlic, and onion

-cook for 8 minutes over medium-low heat⁣
-push veggies to the side, crack both eggs, scramble for 2 minutes then set veggie and egg mixture aside in a bowl
-add your sauce to the same pot and boil until it starts to slightly thicken ~3 minutes⁣
-add noodles and veggie & egg mixture to the pot

-cook and stir for an additional 5 minutes

-remove from heat and add garnishes

-enjoy!
