One Pot Pad Thai
Ingredients:
-1 package of rice noodles
-1 3/4 cups carrots
-2/3 cup chopped onion
-2 cloves garlic
-1 cup bean sprouts
-2 eggs
Sauce:
-1 tbsp peanut butter
-2 tbsp honey
-2 tbsp lime juice
-1 1/2 tbsp rice wine vinegar
-3 tbsp fish sauce
-1/4 cup coconut aminos or soy sauce
-1 tbsp sriracha
Garnishes:
-1/4 cup green onions
-1/3 cup crushed peanuts
-lime slice
-cilantro
Instructions:
-prep your veggies, wash and slice
-mix all ingredients for the sauce in a bowl and set aside
-cook rice noodles according to package instructions and set aside
-in the same pot add a dash of sesame oil, carrots, bean sprouts, garlic, and onion
-cook for 8 minutes over medium-low heat
-push veggies to the side, crack both eggs, scramble for 2 minutes then set veggie and egg mixture aside in a bowl
-add your sauce to the same pot and boil until it starts to slightly thicken ~3 minutes
-add noodles and veggie & egg mixture to the pot
-cook and stir for an additional 5 minutes
-remove from heat and add garnishes
-enjoy!
