Peanut Butter Caramel Cacao Cookies

So much good stuff going on in here...
GF + Vegan

For the Dough:

  • 3/4 cup of gluten free flour

  • 1/4 cup coconut oil

  • 1/2 cup peanut butter

  • 1/2 cup maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/3 cup cacao nibs

For the Caramel:

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 2 TBSP peanut butter

  • Dash of cinnamon and vanilla

Preheat oven to 350F

-Melt coconut oil, peanut butter, and maple syrup together over low heat for a few minutes
-In a separate bowl mix together flour, baking soda, and vanilla extract
-Fold together wet and dry ingredients
-Mix in cacao nibs
-Form the dough into balls
-Bake in oven for 5 minutes
-While they are baking place all ingredients for the caramel in a small pot on medium-low heat
-Take the cookies out of the oven and spread caramel over each one
-Place back into the oven for 2-5 minutes
