Drunken Noodles

Ingredients:

-1/4 cup green onion

-2 tbsp sesame oil

-3 garlic cloves

-1/2 tsp fresh ginger

-1 green bell pepper

-1 bunch of  broccolini 

-3/4 cup shredded carrots

-1/2 cup chopped shallots 

-rice noodles 

-1/4 cup green onion

-1/4 cup chopped thai holy basil 

-tofu (easy recipe on my tik tok!)


Sauce:

-2 tbsp hoisin sauce

-1/3 cup soy sauce 

-2 tbsp water

-2 tsp sriracha 

-2 tsp coconut sugar or brown sugar


Instructions:

-add sesame oil to wok or large pan, add half of the green onions, garlic, ginger, bell pepper, broccolini, shallots, and carrots, cook and stir for 3 minutes

-cook noodles according to package instructions and set aside 

-mix all ingredients for sauce in a bowl and set aside

-add sauce and tofu to the pan and stir for an additional 2 minutes

-mix in noodles, cook for an additional minute or two 

-serve and enjoy!
