Spiced Cod Tacos with a Creamy Cilantro Slaw
Green slaw:
-2 TBSP olive oil
-2 TBSP water
-1/3 cup chopped cilantro
-1/3 cup chopped green onion
-1 tsp garlic powder
-1/2 tsp salt
-juice of 1 lime
-1/4 cup df yogurt or sour cream
-throw all ingredients into a blender and pour over 2 1/4 cups of broccoli slaw or purple cabbage
fish:
-1 tsp chili flakes
-1 tsp cumin
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp salt
-1 tsp cayenne
mix all together in a bowl and spread over 1 lb of cod
Misc. ingredients:
-mini tortillas
-cojita cheese
-chopped mango
Instructions:
-pan fry spiced fish with olive oil over medium-low heat for 7 minutes on each side
-make broccoli slaw and set aside
-grill tortillas on pan for 2 minute on each side
-once fish is done assemble tacos:
-tortilla, slaw, fish, cojita cheese, and chopped mango
-enjoy!
