Cozy Winter Pasta
Ingredients:
-2 cups mushrooms
-2 cups cubed butternut squash
-Gluten free or regular pasta
-4 tbsp vegan or regular butter
-1/4 tsp thyme
-2 tbsp chopped sage leaves
-1 tsp chopped garlic
-pinch of salt and pepper
-1/4 cup walnuts
-1 1/2 cup parmesan or vegan parm
Instructions:
-melt the butter over medium low heat for about a minute
-add the butternut squash and mushrooms cook for 5 minutes
-cook the pasta in a separate pot according to package instructions
-add garlic, sage, and thyme, cook for an additional 2 minutes
-add walnuts, salt, and pepper, simmer over med-low heat for 5 minutes
-drain pasta and add back into the pan, mix in parmesan, and voila!
-enjoy!
