Cozy Winter Pasta

Ingredients:⁣

-2 cups mushrooms⁣
-2 cups cubed butternut squash⁣
-Gluten free or regular pasta⁣
-4 tbsp vegan or regular butter⁣
-1/4 tsp thyme⁣
-2 tbsp chopped sage leaves⁣
-1 tsp chopped garlic⁣
-pinch of salt and pepper⁣
-1/4 cup walnuts⁣
-1 1/2 cup parmesan or vegan parm⁣

Instructions:⁣

-melt the butter over medium low heat for about a minute⁣
-add the butternut squash and mushrooms cook for 5 minutes ⁣

-cook the pasta in a separate pot according to package instructions ⁣
-add garlic, sage, and thyme, cook for an additional 2 minutes ⁣
-add walnuts, salt, and pepper, simmer over med-low heat for 5 minutes

⁣-drain pasta and add back into the pan, mix in parmesan, and voila! ⁣

-enjoy!
